Summertime Delicious Breakfast

Our digestive fire (agni) is lower in the summer. It is important then to favor meals that will be easy for our bodies to break down and assimilate. Coconut Rice is easy to digest and has cooling and soothing qualities, making it a great option for our summertime breakfast!


Coconut Rice

INGREDIENTS:

1 cup jasmine rice
3 cups water
1 Tbsp lime juice
1 Tbsp maple syrup
1/3 cup unsweetened classic coconut milk
1/3 cup toasted coconut flakes
Lime zest

PREPARATION:

In a medium saucepan, bring the water, maple syrup, and lime juice to a boil. Stir rice into water and return to a boil. Reduce heat to low and cover, stirring it occasionally for about 20 minutes. Remove rice from heat and stir in coconut milk. Garnish with coconut flakes and lime zest.

This recipe will pacify pitta and vata types. It will aggravate Kapha. I recommend that kapha types substitute jasmine rice with brown basmati rice. Also, use raw honey instead of maple syrup. Add the raw honey together with the coconut milk, after the rice is removed from the heat.
